Why eat goat meat?  Because it is absolutely delicious!  Goat meat is a mild
tasting meat, not gamey or strong.  It can be used as a replacement in any
recipe for beef, pork, or lamb.  It easily lends itself to cooking with spices,
sauces, and marinades.  Goat meat is very low in fat and easily digested.  
Goat meat is lean, high in iron and low in cholesterol.  Research also has
indicated that goat meat has a balanced proportion of saturated to
unsaturated fatty acids and it is a rich source of conjugated linoleic acid-a
fatty acid that, over the past two decades, has been associated with a
reduction in cancer, heart disease, onset of diabetes and accumulation of
body fat.

A friend of mine and I have joined forces in selling goat meat to restaurants,
at the Spokane Farmers Market, and to discerning consumers.  The goats  
average between 70-100 pounds live weight so customers can enjoy larger
cuts of this exceptional product.  Our goats are between six and eight
months old and are “forage-finished” for extra texture and flavor.  “Forage
finished” means they always have access to pasture grass and hay.  When
they are young, they also have access to grain that is locally grown by a
neighboring farmer who uses dry land farming techniques.   Our meat
animals are raised without growth hormones, antibiotics, animal by-
